Pancit Palabok

I don't eat much Filipino food but when I do, one of my favorite dishes is Pancit Palabok. I decided to experiment with this Filipino dish one night and I was so happy with the out come.

For this dish, I used the traditional Filipino palabok noodles. They are fat white rice noodles that resembles spaghetti. My palabok contains shrimps (shell off), lean ground pork, squid (I use small squids so that they are nice and tender), and a shrimp based sauce. It is garnished with crushed pork rinds, scallions, and eggs. An order would safely serve at least 12 people and sells for C$55 per order.
